Line a baking sheet with parchment paper or a Silpat and set aside. Use a large pot with a lid (at least 6 quarts) to prevent sugar burning.
Step 2: Heat the oil
Add just enough oil to coat the bottom of the pan. Place 4 popcorn kernels in the oil, cover the pan, and heat over medium until they pop — this means your oil is hot enough.
