Soy Sauce Popcorn

We were searching through the sauces in our kitchen one day, trying to find something interesting to top our popcorn, when we spotted the bottle of soy sauce. Soy sauce popcorn? Is that a thing? Turns out it's not only a thing but it's served at Disney World Tokyo. Plus we love that rich, umami flavor that soy sauce adds to recipes. Disney or not, this was about to happen at our house.

This one is obviously salty and savory, perfect when you've had too many sweets. We tried a couple of different ways to add the soy sauce and decided that we liked it best mixed with butter. For that reason we chose to pop the popcorn in the microwave instead of our usual oil on the stovetop method. Of course we used our own microwave popper. Once we popped the corn, we melted the butter and mixed it with soy sauce, poured it on the warm popcorn and spread it all out on a baking dish. You don't have to bake it but we hate sacrificing any part of the crunch and we like how a short amount of time in the oven sets the coating.

We also thought about what would enhance this flavor profile and tossed on some sesame seeds as well. They got toasted in the oven and adhered to the sauce. Yum. Other ideas would include crumbled dried seaweed or even some Parmesan cheese.

Whatever you add, this was a nice combo of the light, airy popcorn and the rich umami soy sauce and made a satisfying, bold snack.
