Recipe: Strawberry-Coconut Coladaritas

What's a Colandarita, you ask? Let's just say it's a marriage between a colada and a margarita, with all the flavor of the tropics. They are a delicious and refreshing drink inspired by the best of both traditional cocktails. Let us know what you think in the comments.

Ingredients: 

  • 1 cup organic cane sugar 
  • 1 cup water 
  • 1 1/2 cups fresh (or frozen) strawberries, sliced 
  • 1/2 cup triple sec 
  • 1/2 cup tequila 
  • 1/2 cup fresh lime juice 
  • 1/2 cup coconut milk 
  • 1/2 cup cream of coconut 
  • Red sanding sugar (for garnish)

Directions:

First, make a strawberry puree: Pour the the organic cane sugar and water in a medium saucepan and bring to a boil. Let the sugar dissolve completely, then cool that mixture completely. Pour this simple syrup into a blender and add your strawberries. Puree in the blender, then pour this puree into another clean container.

Next, in your blender, combine 1/2 cup of this strawberry puree, triple sec, tequila, lime juice, coconut milk, and cream of coconut, and 2 cups of ice. Puree until smooth.

Rim your bar glasses with red sanding sugar, then pour the drink into the glass and garnish with strawberries and shredded coconut. Makes 4 drinks.
