This is the time of year when parties are a'plenty - and so is the need for hostess gifts. One of our favorite gifts to give: food. (Of course. Shocker, right?)
Something that's easy to make are spiced rum balls. Even better? Make a batch with your own spiced rum. It's incredibly easy.
RECIPE: HOW TO MAKE SPICED RUM
1 (750-mL) bottle dark rum
2 rounded teaspoons of Dell Cove Spices' mulling spices
1 vanilla bean, sliced and split (optional)
1 slice of fresh ginger (optional)
Directions: In a heavy-bottomed sauté pan, combine spices and lightly toast over medium-high heat until fragrant, about 2 minutes. Remove from heat and set aside. Cool slightly, then Add to a 1 quart jar with a lid. Add rum. close lid tightly and let jar stand for one day in a cool, dark and dry place. Shake jar occasionally. for more pronounced flavor let rum infuse a second day. Then, strain out the spices, rebottle liquid into clean glass jars.
See? Easy. Now, on to the rum balls.
Rum balls are a terrific alternative to cookies for your annual Christmas Cookie exchange or holiday tea party. Now, don't get me wrong: I have fond memories of the spiced rum balls my aunts would have out during the holidays to be so strong in the rum flavor, you could have probably set my breath on fire from the fumes.
Some people love that rum flavor (maybe they were pirates in a past life?) Other folks prefer the flavor to be a bit more subtle. So adjust the volume of rum you use accordingly.
Also, get creative with the decorating! Try rolling these tasty little chocolate bombs in colorful sprinkles, shredded coconut or even our Christmas Cocktail Rim Sugar, to add a festive touch to your sweets. If you want to cut the bitterness of the dark cocoa, try mixing it with a bit of powdered sugar - then roll the rum balls into the cocoa.
RECIPE: HOW TO MAKE SPICED RUM BALLS
1/4 cup spiced rum
6 oz semi-sweet chocolate (chopped)
4 tablespoons butter
1/4 cup walnuts (toasted, chopped)
1 1/2 cups powdered sugar
Dark cocoa powder
Pinch of salt
Directions: Sprinkle your dark cocoa powder onto a shallow bowl or flat plate. Set aside.
Heat rum in a small skilled over medium heat, until the rum has been reduced by half. Set aside. In a heat-proof bowl over a double-boiler, melt the chocolate and butter. STIR STIR STIR. Seriously, stir steadily until everything is combined. Remove this mixture from the heat and stir in the nuts, rum, sugar and salt until everything is fully blended together.
Grab a spoon and take out a small scoop of the dough. Using your hands, form the dough into a 1-inch ball. Then, take the ball and roll in around in your plate (or bowl) of dark cocoa powder. Brush off excess cocoa and set aside. Repeat process. Chill your rum balls in an air tight container and keep refrigerated until just before your guest have arrived and you're ready to serve.
